About

The intensity of the French Chocolate and Confectionery Arts program from Ecole Nationale Supérieure de Patisserie requires that each candidate has a genuine interest and motivation for the chocolate and confectionery environment.

Mastering the basic chocolate-making and confectionery techniques. Structured around 8 specific modules, the course will allow the student to acquire essential chocolate-making, confectionery, and chocolate-base pastries techniques, from receiving product deliveries to implementing simple recipes and pieces. 

The student will also check the packaging before sale. For a personalized and unique approach, 80 percent of skills acquisition is achieved through practical learning in small group workshops.

During your stay, the following are sample topic that may be reviewed (These topics are subject to change from one session to another):

  • Chocolate :  Crystallizing, molding, shaping, sticking, enrobing…
  • Confectionery :  Making pralines, soft and hard caramel, jelly candies, nougat, pâtes de fruits…
  • Chocolate-Based Pastries :  Choux pastry, génoise, meringue, Chantilly, ganaches…
  • Simple chocolate and sugar pieces :  Tempering, molding and pouring couverture chocolate, assembling decoration, cooking and coloring sugar…
  • Buffet-cocktail reception :  Sweet buffet, buffet presentation…
