Course structure:
The Italian Pastry Program is a 4 weeks full time course, with 5 days per week demonstration and hands-on sessions. Moreover, an optional traineeship phase after the end of the course.
During the 4 weeks course, the student will learn about:
- Creams, shortcrust pastry and sponge cake.
- Chocolate: tempering, pralines, finishing, decorations
- Puff pastry and cream puffs
- Single serve desserts
- Italian style petit fours
- Italian artisanal gelato
- Food studies and Italian Culture
