Programme Structure

Course structure:

The Italian Pastry Program is a 4 weeks full time course, with 5 days per week demonstration and hands-on sessions. Moreover, an optional traineeship phase after the end of the course.

During the 4 weeks course, the student will learn about:

  • Creams, shortcrust pastry and sponge cake.
  • Chocolate: tempering, pralines, finishing, decorations
  • Puff pastry and cream puffs
