About

The Italian Home Kitchen Series - The Italian Leftover Makeover course offered at Dusit Thani College will help you learn how to transform yesterday’s ingredients into today’s celebration.

Overview

Designed in collaboration with ALMA – The School of Italian Culinary Arts, this course brings the Italian philosophy of nothing wasted, everything transformed to life, right here in Bangkok.

No prior experience is needed for this Italian Home Kitchen Series - The Italian Leftover Makeover course offered at Dusit Thani College. You’ll explore two beloved Southern Italian dishes born from resourcefulness and packed with flavour: Arancini – golden, crispy rice balls with molten centres, Frittata di Pasta alla Napoletana – a savoury pasta omelette made from leftover spaghetti

These dishes make the most of what’s already in your kitchen while showcasing the creativity, warmth, and practicality at the heart of Italian home cooking.

What you will learn

  • Create Two Classic Italian “Leftover” Dishes: Learn to prepare Arancini and Frittata di Pasta using foundational Italian techniques.
  • Practice Ingredient Repurposing: Understand how to turn leftover rice, pasta, or common fridge items into impressive new meals.
  • Explore the Culture of Cucina di Recupero: Discover the Italian tradition of cooking with care, respect, and creativity using what’s on hand.
  • Develop Kitchen Confidence and Flexibility: Gain practical, adaptable cooking skills that can be applied in any home kitchen.
  • Bring ALMA’s Culinary Wisdom Home: Experience hands-on Italian instruction in Bangkok and walk away ready to make every meal — even a leftover — something worth celebrating.
