Participants will explore a plant-forward culinary approach, integrating animal products in a measured and thoughtful way, while expanding their culinary repertoire through the use of both familiar and less commonly used ingredients.
The program follows a progressive learning path, enabling participants to apply technical skills in a creative context, through phases of experimentation, testing, and refinement.

- Hold a CAP Cuisine (or equivalent), or demonstrate prior culinary training or at least 1 year of professional experience in a kitchen environment
- 18 years minimum
